Restaurant Weeks were launched years ago by tourism officials as a way to lure diners during January, typically a "slow month" in the food-service industry — with restaurateurs highlighting their best cuisine with discounted specials and prix-fixe menus.

The concept ballooned statewide, with regional chefs putting local twists on the promotions, which now are staggered throughout the year and often run longer than a week.
